Vanilla Bean Cashew Cream Berry Parfait

2 tbsp Honey, raw
1/4 cup Blueberries (Fresh or thawed)
1/4 cup Raspberries (Fresh or thawed)
1/4 cup Blackberries (Fresh or thawed)
1/3 cup Cashew nuts, raw
2 tbsp Pine nuts, dried (Raw)
1/2 cup Water, filtered
2 pod Vanilla bean
1 pinch Himalayan sea salt


  1. Heat a small saucepan to medium-low heat.  Add honey and heat until melted.  Add berries and stir constantly with a spatula or flat-edged spoon just until the mixture becomes syrup-like, but the berries are still intact.  Remove from heat.
  2. Drain nuts from the soaking water and rinse.  Combine with 1/2 cup water in a blender and blend until smooth.  Add a few more nuts if it's too thin (the texture should be thick).
  3. Slice the vanilla pods in the middle lengthwise.  Scrape the contents out with a knife by sliding it all the way down the bean.  Add the scraped-out part to the cream and mix well. Add a pinch of salt and mix.
  4. Pour cream into a glass or bowl and top with berry mixture. You can layer the 2 components in an alternating pattern if you'd like.

1 - 3 days prior [optional], Cashew nuts, raw 1/3 cup

Soak overnight or for at least 8 hours.

  • Have fun with different fillings - ginger root, lemon, and honey is tasty as well.
