3 cup Coconut flakes, unsweetened (large)
2 tbsp Coconut oil
1/2 tsp Cinnamon
1 dash Vanilla bean powder (available at health food stores)


  1. In a large skillet, melt coconut oil over medium heat.
  2. Add coconut flakes, cinnamon, and vanilla powder. Mix well, ensuring coconut flakes are coated with the seasoning.
  3. Cook until coconut flakes are golden, about 8 to 10 minutes, stirring frequently. Keep an eye on the skillet because coconut can burn very quickly.
  4. Transfer immediately to a plate and allow to cool completely.
  5. Store in an airtight container. Will keep up to 2 weeks.
