2 cup Coconut flakes
1/4 cup Coconut flour
1 tsp Baking powder
2 pod Vanilla bean (scraped)
6 medium egg Egg
1/3 cup Coconut milk, sweetened
1/4 cup Coconut oil
1/4 cup Maple syrup


Preheat oven to 180C and prepare a muffin tray with paper muffin pans or grease with butter.

Mix together shredded coconut, coconut flour, vanilla bean, and baking powder in a bowl.

In a separate bowl, mix together the eggs, coconut milk, coconut oil, and maple syrup well.

Mix the two mixes together well.

Divide mixture evenly into the muffin tin.

Bake for 13-16 minutes, or until golden brown and knife comes out clean.
