1/2 cup pitted | Dates |
1/2 cup | Almond flour/meal, Bob's Red Mill |
1/2 cup | Protein powder, Sun Warrior, chocolate (vegan protein powder) |
1/4 cup | Flaxseed meal (ground) |
3 tbsp | WowButter, Soy Nut Butter (any nut butter) |
2 tbsp | Coconut butter |
4 tbsp | Coconut flakes, unsweetened (to roll the balls in) |
1. Use a Vitamix or food processor
2. Puree the dates with the coconut butter
3. Add all ingredients, minus the shredded coconut
4. Rest the mix for at least 30min in the fridge, this way it is less sticky
5. Roll little balls and dust them with coconut
6. Keep them in the fridge till you eat or serve them
