Ingredients


1 cup Black beans, canned (You can also used cooked beans from dry.)
1 plantain(s) Plantain, green, raw (cooked and mashed)
1 clove(s) Garlic (minced)
1/4 cup White onion (diced)
1/4 cup grated Carrots
1/4 cup Portobello mushroom (diced, any mushroom will work)
1/4 cup grated Zucchini
1/4 cup Walnuts
1 pinch Sea salt, fine (or to taste)
1 dash Black pepper (or to taste)
1 tbsp Cilantro (coriander) (fresh, minced)
1/4 tsp Cumin (or to taste)
1/4 tsp Chili powder (or to taste)
1/4 cup Coconut oil (for sautéing)
1/4 cup Amaranth, raw (cooked as per package instructions )

Instructions


  • In a food processor, combine the walnuts, chili powder, cilantro, sea salt, pepper, and cumin until you have a meat like texture, not too long or it will become a paste
  • Beans; if you are using canned simply rinse, mash and set aside.  If cooking from raw, when they are ready mash and set aside to cool.
  • Cook raw amaranth as per package instructions and set aside to cool, this will become a sticky like texture, perfect for holding the burger together.
  • in a cast iron pan, heat 1 tbsp of coconut oil and sauce the plantain until softened, mash and set aside to cool
  • In another pan, heat 1 tbsp of coconut oil and saute, garlic, onion until soft, then add grated carrot, zucchini and mushroom.  When this mixture has softened, turn of the heat and allow to cool.
  • In a large bowl, mix all ingredients well: The veggie mixture, the amaranth, the walnut mixture, the mashed plantain and mashed beans.
  • Once well combined, form into burger patties and let cool in the fridge for approximately one hour to solidify.  
  • In a cast iron pan, heat 1 tbsp of coconut oil and fry up those burgers!!!
  • You can enjoy these on buns or I loved them on tostadas. 
  • Top them off with you favourite toppings like a spicy pineapple salsa or avocado, lettuce and spicy pickled onions.
