2 tbsp Almond butter
1/2 cup Carrots (shredded)
1/2 cup Zucchini (shredded)
2 cup Almond flour/meal, Bob's Red Mill (or any flour of your choice)
1/2 tsp Baking soda
1 tsp Baking powder
2 tsp Cinnamon
1/4 tsp Salt
2 tbsp Butter, unsalted
1/4 cup Stevia sweetener, powder (or your choice sweetener)
1 tsp Vanilla extract, pure
1/4 cup Walnuts (chopped)
2 large Egg

Instructions


Mix all ingredients together. then comnbine in a muffin tin. Should make 12 muffins.

optional - Crumb topping

1/2 cup almond flour & 1/4 cup of Brown sugar with 2 tbsp melted butter
