To make delicious vegan Dutch holiday bread with almond stuffing.
Soak 150gr of mixed dried raisins, cranberries, cherries, candied fruit like ginger, orange in 1 tablespoon of lemon juice and 4 tablespoons of rum ( or water)
for about 1 hour.
In a food processor, blitz 100gram raw non salted almonds ( or use almond flour) , 80gr white sugar, the zest of 2 lemons, and a little water, to make a sticky almond paste. place in the fridge to chill.
Time for the bread, if you have use a kitchen aid with dough hooks but elbow-greas works too! Mix 450gr of flour ( preferred 00 pastry flour) 1 little bag of quick yeast, 80gr white sugar, 150 gr of silken tofu or half a pack almond tofu dessert from sunrise, 50gr of vegan margarine or 2oz of coconut oil melted but cold, 7oz of any plant based milk and 1 tea spoon of salt. Till you have a "bread dough"
Mix the drained dried fruit and fold in the dough.
Make one or more ovals of the dough, place the almond mix in the middle and fold the bread " closed".
leave on a warm place under a clean tea towel for about 1 hour.
Ready to bake, oven at 350F for about 45 min to an hour, depending on your oven and how big your bread or breads are.
Dust in icing sugar, enjoy with vegan butter!!
