2 tbsp (1 egg) Egg replacer, powder, Bob's Red Mill
1 cup Holiday Nog, Coconut (or other vegan eggnog)
1 cup Coconut sugar
1/2 cup Butter, vegan (softened)
2 tsp Vanilla extract, pure
2 1/4 cup All-purpose white flour
2 tsp Baking powder
1/2 tsp Salt
1/4 tsp Nutmeg, ground
1 cup Powdered/icing sugar
1/4 cup Holiday Nog, Coconut
1/2 tsp Vanilla extract, pure
1 dash Nutmeg, ground

Instructions


Vegan Holiday Nog Bread

  1. Preheat your oven to 350°F and grease only the bottom of a 9x5-inch loaf pan.
  2. In a large mixing bowl, blend the egg replacer, Holiday Nog, coconut sugar, vegan butter, and vanilla extract with a hand mixer.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
  4. Add the dry ingredients to the wet ingredients mixture and stir until just moistened.
  5. Pour the batter into the prepared loaf pan and even it out.
  6. Bake for 45 to 60 minutes, or until a tester inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, before removing it to a wire rack to cool completely.


Holiday Nog Glaze

  1. In a medium bowl, whisk together the powdered sugar, Holiday Nog, vanilla, and nutmeg until smooth.
  2. Drizzle the glaze over the completely cooled bread.
  3. Let the icing set for a minute before slicing.
