Ingredients


1 large head Cauliflower (cut into bite-sized florets)
1/2 tbsp Garlic powder
1 tsp Cayenne pepper
2 tbsp Olive Oil, Extra Virgin
2 tsp Onion powder
2 tsp, ground Thyme, dried
2 tsp Parsley, dried
2 tsp Salt
1 tsp Paprika
1 tsp Allspice, ground
1/2 tsp Nutmeg, ground
1/4 tsp Cinnamon
1 1/2 cup shredded Red cabbage
1/2 cup Green onion (sliced)
1 mango Mango (diced)
1/2 whole lime(s) Lime juice (fresh) (juiced)
1 tbsp Cilantro (coriander) (chopped)
1 dash Salt and pepper (Light Himalayan pink)
1 medium tortilla(s) Whole wheat tortilla (use your favorite kind of tortilla, warm)

Instructions


  1. 'Preheat oven to 400
  2. Place cauliflower florets on a large baking sheet covered in parchment paper and drizzle with olive oil.
  3. In a separate small bowl, mix spices together. Sprinkle spice mixture over cauliflower*, and pop in the oven. Bake for 20 minutes, or until cauliflower is fork tender and golden brown.
  4. Meanwhile, make the salsa. Mix together salsa ingredients in a medium bowl and set aside.
  5. To assemble, stuff warmed tortillas with roasted cauliflower and mango salsa. Serve.
