Vegan protein chocolate cookies

Ingredients


60 gm Rolled oats, dry
1/4 cup Cocoa powder, unsweetened
1 tbsp Baking powder
60 gm Vital wheat gluten
60 gm Pea Protein Powder (any flavor)
1 packet Vanilla sugar
1/2 cup Dark chocolate chips, vegan
1/4 cup Maple syrup
2 tbsp Chia seeds
1 pinch Himalayan salt
2 tbsp Flaxseed meal (ground) (flax egg)
2 tbsp Water (flax egg)
86 gm Cashew milk, unsweetened (any plant based milk when needed)

Instructions


 1.  Preheat oven to 350 degrees F, and line a baking sheet with parchment paper or a silicone baking math.

 2. Make 2 flax eggs, 2tbs water and 2tbsp flax mixed together, let it rest for a few minutes.

 3. Mix cocoa, salt, baking powder, wheat gluten, chai seeds, oats and protein powder.

 4. Add the flax eggs and plate based milk or extra water if needed, it should form a thick cookie dough.

5. Form little cookies and place on the baking sheet.

6. Bake for about 10-12min
