Instructions
- Preheat the oven to 375 degrees F and grease a 9×13″ or similar-sized baking dish with oil of choice.
- In a large mixing bowl, add cooked shredded chicken, cottage cheese, and sour cream and stir to combine.
- Add shredded cheese, parsley, salt, garlic, shallot, thyme, and lemon juice. Stir until fully combined and evenly distributed.
- Gently fold in the spinach and artichoke hearts until just combined.
- Pour mixture into the greased casserole dish and sprinkle the remaining shredded cheese over the top of the casserole.
- Bake for 40-50 minutes, or until the cheesy top is lightly golden brown.
- While the casserole is baking, prepare the quinoa as per package directions, using the chicken broth instead of water.
- Let the casserole sit for 10 minutes before serving. Serve casserole over a bed of quinoa and enjoy!
