Vegan Spinach Brownies

1 1/2 cup All-purpose white flour
1/2 cup Almond milk, unsweetened (or other milk alternative)
1 tsp Baking soda
1/3 cup Cacao powder, raw
1/3 cup Coconut oil
1/4 cup, sifted Powdered/icing sugar (for topping)
1/2 cup Maple syrup
2 cup Spinach (1/3 cup steamed, pureed)


Preheat oven to 375F.

Steam spinach over boiling water until wilted. Drain and puree spinach in blender, or by hand.

In a large bowl mix together the flour, cacao, and baking soda.

In a small bowl mix the maple syrup, milk alternative, coconut oil and spinach puree.

Combine the wet ingredients into the dry.

Pour mixture into pan and bake for 25 minutes. Sprinkle with icing sugar if desired.

Serve and enjoy!
