1. Start by cooking the rice. Add some olive oil to a pan with 1 cup of rice. Sauce the rice until slightly brown. Add 2 cups of vegetable broth, 1/3 cup of tomato sauce, 1 tsp of cumin, 1 tsp of chili powder, and mix together.
2. Cover the pan with a lid and let it simmer for 15 minutes, or until you can no longer see any water. Turn the heat off and let the rice sit for another 10 minutes. Fluff with a fork and top with cilantro.
3. While the rice is cooking, cook the Beyond Ground Beef in a pan on medium heat. Cook for 5-10 minutes until browned. Season with sea salt, cumin, and chili powder.
4. Heat the beans up in a pan on medium heat until hot.
5. Make guacamole by mashing the avocado and adding salt, pepper, garlic powder, lime, and cilantro.
5. Cook the corn tortillas in olive oil until hot and lightly browned.
6. Prepare the tacos by adding the beans, rice, meat, guacamole, and cheese.
7. Optional: Add some vegan sour cream or use a flour tortilla to make a burrito.
