Vegan White Bean Artichoke Dip

1 can (15oz) Cannellini beans, canned (drained, rinsed)
1 can (15oz) Artichoke hearts, canned (drained)
1 tsp Lemon peel (zest)
2 tbsp Lemon juice
2 clove(s) Garlic (minced)
1 dash Crushed red pepper
1/4 cup Extra virgin olive oil
1 pinch Salt and pepper
2 tbsp Parsley, fresh (for garnish)


Place the cannellini beans, artichoke hearts, lemon zest, lemon juice, garlic, and crushed red pepper flakes in a food processor and process until fairly smooth. With the motor still running, slowly drizzle in the olive oil. Season to taste with salt and pepper.

Serve at room temperature or chilled with a few tablespoons of minced parsley.
