1 tbsp Olive Oil, Extra Virgin
1 cup White onion (chopped)
2 clove(s) Garlic (minced)
1 tsp Cumin (ground)
1 dash Salt
1 can (19oz) Black beans, canned (drained and rinsed)
3 cup Sweet potato (diced)
1 cup Crushed tomatoes canned
1 cup Vegetable stock/broth, low sodium
1/4 cup shredded Monterey jack cheese
1/4 cup Greek yogurt, plain, fat-free


  1. Heat oil in large pot over medium heat. Saute onions and garlic for about 1-2 minutes.
  2. While stirring, add chili powder, cumin, salt and black beans and heat until fragrant. 
  3. Add sweat potatoes, tomatoes and stock. Bring to a simmer and cook for 25 minutes or until sweet potatoes are cooked. If chili is too thick, add 1/2 cup water.

Top Vegetarian Chili with cheese and Greek yogurt.
