Vegetarian "Fish" Cakes

2 tbsp All-purpose white flour
1/2 can (15oz) Cannellini beans, canned (rinsed, drained)
1/2 cup diced Celery (finely diced, optional)
1 cup Cornmeal (yellow)
2 large egg Egg
2 stalk(s) Green onion (thinly sliced)
1/2 whole lemon(s) Lemon peel (zest)
2 tbsp Parsley, fresh
4 potato Potato (boiled, mashed)
1 tsp Salt
2 small shallot(s) Shallots (finely diced, or onion)


In a large bowl, roughly mash the cannellini beans.

Add the rest of the ingredients (except cornmeal) and stir to combine.

Form into patties, roll in the cornflour, and chill in the fridge for at least 30 minutes (overnight is best).

Heat a large pan over medium heat, and add some butter and olive oil. Fry patties gently for about 8 minutes each side until golden and crispy, and cooked through.

Serve with an extra wedge of lemon and your favourite sauce.
