1/4 tsp Black pepper (to taste)
2 medium Carrots (chopped)
3 bulb Garlic (chopped)
1/8 tsp Nutmeg, ground
2 tbsp Olive oil
1 tbsp Paprika
1 tbsp Parsley, fresh (chopped)
1 1/2 cup Red kidney beans, canned, drained (drained, rinsed)
1/4 tsp Salt (to taste)
2 tbsp Sour cream, light (garnish)
2 tbsp Tomato juice (to taste)
1 tbsp Tomato sauce, canned
1 1/2 cup White beans, canned (drained, rinsed)
1 medium Yellow onion (chopped)
2 medium Zucchini (chopped)


Heat olive oil in a sauce pan and sauté onions, garlic, carrots and zucchini for 5 minutes.

Stir in all the other ingredients except for the sour cream. Cook over low heat for 15 minutes.

Top with sour cream and serve.
