4 piece Rice paper
1 cup Baby spinach
1/4 cup Kimchi
1/2 avocado(s) Avocado
1/4 cucumber(s) Cucumber (matchsticks)
1/2 cup grated Carrots
1/2 cup Beets, raw (grated)
1/2 cup slices Apple (matchsticks)
4 sprig Cilantro (coriander)
4 tsp Dijon mustard

Instructions


Fill a deep dish plate with warm water. Soak rice wraps until soft (about 1 minute each).

Place softened rice wrap on a flat surface and a lay several spinach leaves along the center, leaving space at both ends. Layer a quarter of the remaining ingredients in order on each wrap.

To assemble the wrap, fold the short edges to hold the filling inside the wrap. Starting at one end, roll the wrap tightly to form a tube. Repeat for the next 3 wraps.

One serving is 2 veggie rice wraps.
