Ingredients


57 gm Japanese noodles, soba, dry
1 tbsp Lemon juice (fresh)
1/2 cup whole Sugar snap peas (washed, ends removed, and halved)
1 cup Bok choy (chopped)
1/4 cup grated Carrots
1/4 cup Frozen edamame (soybeans) (thawed)
1 tsp Sesame seeds
1 tbsp Sesame seed salad dressing, regular (or salad dressing of choice; to taste)

Instructions


  1. Bring water to a boil in a pot. Boil the soba noodles according to package instructions - about 5 minutes.
  2. Drain the noodles, remove from heat, and toss with lemon juice.
  3. Cut the soba noodles into smaller pieces and separate them.
  4. Toss the snap peas, bok choy, carrots, and thawed edamame with the noodles.
  5. Top with sesame seeds and a drizzle of sesame dressing (or dressing of choice)
