Vietnamese Spiralized Sesame Noodles with Scallops

3 tbsp Sesame oil
2 green onion (stem) Green onion (chopped)
1 tbsp Garlic (minced)
2 tsp minced Ginger root
1 tsp packed Brown sugar
2 tbsp Soy sauce, low sodium
1 tbsp Fish sauce
1 tbsp Lime juice (fresh)
2 medium Zucchini (spiralized)
227 gm Scallop, raw
1 cup grated Carrots (or spiralized)
1 cup Radish (slivered)
3 tbsp Basil, fresh (chopped)


Combine sesame oil, scallions, garlic, ginger and brown sugar in a small saucepan. Heat over medium heat until starting to sizzle. Cook for 15 seconds. Add scallops and cook until they are slightly golden.

Remove from heat and stir in soy sauce, fish sauce and lime juice.

Transfer to a large bowl and add zucchini noodles, carrots, radishes and basil. Gently stir to combine.
