1/4 cup Butter, salted
2 cup shredded Cheddar cheese, reduced fat (18%)
2 1/2 cup Partly skimmed milk, 1% M.F.
1 3/4 cup Pasta, macaroni, elbow, whole wheat, dry
1/2 cup slices Summer squash (pureed)
1/2 cup Wheat flour, whole wheat
1 medium Yellow onion (diced, optional)
1/2 cup slices Zucchini (pureed, or carrots, cauliflower)


Cook noodles as directed on package.

In a separate pan or skillet, melt butter and add onion, cooking until soft. Add flour and mix into melted butter until clumps form. Slowly pour in milk and stir with a whisk as milk heats up and flour dissolves.

Add cheddar cheese and pureed vegetables, stirring until sauce comes to a boil. Remove from heat and let cool slightly to thicken. If too thick add more milk.

Add only what you need to the noodles. You will have left over sauce. It freezes really well and makes the next batch of healthy Mac & Cheese easy!
