Wheat Berry & Lentil Salad

3 tbsp Canola oil (for dressing)
2 tbsp White wine vinegar (for dressing)
2 tsp Honey (liquid, for dressing)
1/4 tsp Salt (for dressing)
1 dash Black pepper (for dressing)
3/4 cup, dry Wheat berries (rinsed)
1 cup Lentils, canned
1 cup Walnuts (halves)
1 large Apple (cored, chopped)
3 stalk(s) Green onion (thinly sliced)


In a small saucepan, cover wheat berries with 2 inches of water. Bring to a boil, reduce heat to medium low and simmer uncovered for 45 minutes. Drain any remaining water and cool.

In a small bowl, whisk together ingredients for dressing.

In a large bowl combine wheat berries, lentils, walnuts, apples, green onions and dressing and toss well.

Serve and enjoy!
