White Bean, Celery & Curry Salad

2 large stalk(s) Celery (chopped)
1/4 cup Croutons, seasoned (BUDDA croutons- for dressing)
1 cucumber(s) Cucumber (chopped)
1/2 cup Green/yellow string beans, raw (chopped)
4 cup chopped Lettuce, butterhead (Boston)
1/3 cup Olive Oil, Extra Virgin (for dressing)
1/4 cup Parsley, fresh (chopped)
1/2 small Red onion (chopped)
1/4 tsp Salt and pepper (to taste- for dressing)
1 can (15oz) White beans, canned (rinsed and drained)


In a frying pan over medium heat, warm the 1 tbsp oil, add bread crumbs, and a pinch of each salt and pepper. Cook, stirring occasionally, until the crumbs begin to brown (5 minutes).

Add garlic and remove from heat and stir for 1 minute longer.

Make dressing.

Chop the parsley, celery, cucumber, green beans, red onion.

Assemble the salad- mix together parsley, white beans, green beans, celery, cucumber, and onion.

Assemble on top of lettuce.

Sprinkle with toasted budda seasoned croutons.
