Ingredients


1/2 cup White beans, canned (drained, rinsed)
1/2 cup Tofu, regular, extra firm (or 4 oz animal protein)
1/4 cup chopped Tomato (or sliced)
2 tbsp chopped Yellow onion
2 tbsp Parsley, fresh
1 tbsp Lemon juice
1 tsp Extra virgin olive oil
1 tsp Balsamic vinegar
1/4 tsp Garlic (minced)
1 dash Thyme, dried
1 dash Black pepper

Instructions


In a large bowl, combine beans, cubed tofu, tomatoes, onions, and parsley.

In another bowl, mix oil, vinegar, lemon juice, minced garlic, thyme and pepper.

Add to bean mixture and toss.
