1/4 cup | Cashew nuts, raw |
1/3 cup | Frozen blueberries (wild) |
1 tsp | Vanilla extract, pure |
1 tbsp | Almond butter |
1/2 cup | Coconut, shredded, unsweetened (to roll the balls in) |
Process the nuts, dates, vanilla, and almond butter in the food processor.
Then add frozen (not thawed) wild blueberries and process again until well blended.
Wet your hands a bit and roll mixture into balls.
Freeze for an hour to harden, if needed. Then remove from freezer and roll in the coconut.
Store in an airtight container in the fridge or freezer.
