Ingredients


1/2 cup Wild rice, dry (cooked according to instructions)
1/2 cup Brown rice, medium-grain, dry (cooked according to instructions)
2 tsp Cinnamon
1 tsp Vanilla extract, pure
2 cup Almond milk, vanilla, unsweetened, Silk
1 tbsp Potato starch
1 tbsp Water, filtered (cold)
1 tbsp Honey (more or less as preferred)
1/4 cup Golden raisin, seedless

Instructions


  1. Cook rice according to instructions and set aside.
  2. Warm almond milk, raisins, and cinnamon in a sauce pot on medium high heat, until steaming. DO NOT BOIL. Turn the burner off, but leave the sauce pot on burner.
  3. Add honey and vanilla and stir until dissolved. Taste and ensure sweet enough for your liking.
  4. In a small bowl, mix the potato starch with a tablespoon of cold water. Mix well and then add to milk mixture on the stove.
  5. Quickly whisk the milk mixture to ensure no lumps. Mixture should thicken up immediately. If not, set burner to medium heat and stir continuously until thickened (careful not to burn). Then remove from heat.
  6. Stir in rice. If the pudding is too thick for your liking, add hot water as needed to thin it out.
  7. Serve hot or cold.

Notes:

You can buy premixed rice blends (wild rice, brown rice, black rice, pearl rice, and even quinoa works mixed in), which are awesome. They offer a lot of texture and color, plus they are made to cook in one pot!

 

Great way to use up left over rice or quinoa!
