1 tbsp Olive Oil, Extra Virgin
1 1/2 bunch Spinach
1 medium White onion (diced)
2 clove(s) Garlic (sliced)
8 large egg Egg (free-range)
1 pinch Sea Salt


  1. Heat the oil in a pan over a medium heat, saute the diced onion and sliced garlic until translucent and fragrant
  2. Add the spinach, and season with salt and pepper. Pop the lid on and cook on low for 1 minute. 
  3. Crack eggs on top, cover lid and cook until desired doneness, about 5 minutes. 
  4. Plate and serve.
