Combine yogurt, granola & fruit in a bowl either in layers, or mixed together. Top with extra peach pieces.
Optional: use other fruit, such as mixed berries, pineapple, mango, papaya, etc.
Preheat the oven to 325 degrees F and position a rack in the center of the oven.
In a large mixing bowl, combine the nuts, seeds, dried fruit, and salt. Spray oil over all ingredients sprinkle in seasonings & mix until all ingredients are evenly coated.
Spread the mixture evenly onto a large baking sheet (may require two depending on size) and bake for 20 minutes.
Once the granola is visibly browned and done cooking (about 20-25 minutes), remove it from the oven and let cool completely.
Store in a container with an air-tight seal and it should keep for a few weeks.
