Zesty Lime Shrimp and Avocado Salad

1 avocado(s) Avocado (diced)
1 tbsp Cilantro (coriander) (chopped)
454 gm Shrimp, cooked (jumbo, peeled, deveined, chopped)
1 medium pepper(s) Jalapeno pepper (seeds removed, diced fine)
2 fruit Lime (juice)
1 tsp Olive Oil, Extra Virgin
1/4 cup Red onion (chopped)
1/4 tsp Salt and pepper (to taste)
1 medium Tomato (diced)


In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
