Ingredients


2 tbsp Ghee (plus more for marinade)
2 tbsp Lime juice (fresh)
2 tbsp Lime peel (zest)
1 tbsp Garlic (minced)
1 piece, 1-inch Ginger root (minced)
1 tsp Hot pepper (chili) flakes (depending on how spicy you like it)
1 tsp Himalayan sea salt
256 gm Beef, rib eye
2 large mushroom(s) Portobello mushroom
15 gm Butter, grass fed, unsalted
256 gm Spinach
2 slice Lime (wedges)

Instructions


  1. In a large bowl, combine 1/4 cup melted ghee, lime juice and zest, garlic, ginger, red chilli flakes and salt, mix together for your marinade.
  2. Remove 4 tbsp from the bowl and transfer to a small bowl, put to one side for later on.
  3. Add the steak toss/rub with the marinade (the ghee will harden after you’re done, that’s OK).
  4. Let the meat marinate for about 20 minutes at room temperature (important to marinate!)
  5. Meanwhile, coat the mushrooms in the remaining marinade and allow to sit for 10-15 mins.
  6. Heat a large skillet over medium heat. Remove the mushrooms from the bowl and cook on each side for 3-4 minutes. Brush the remaining marinade over the mushrooms several times as they cook.
  7. Once finished, remove to a plate and cover.
  8. Transfer the steaks to the skillet. If some of your marinade is still stuck to the bowl, spoon it out into the pan to cook with the steak.
  9. Sear the steak on both sides until it’s cooked to your preference, ie. 4-5 minutes per side (skirt steak cooks quickly!)
  10. Remove steaks to the covered plate and add the butter to the pan with the steak juices, add the spinach and allow to cook and wilt for 5 minutes.
  11. Bring food together & serve with the lime wedges
