1 cup Almond flour/meal, Bob's Red Mill (or I like to use pecan flour)
1 tbsp Flaxseed meal (ground) (golden ground)
1 tsp Italian herb seasoning (your favorite; optional)
1 dash Salt
1 large Egg ((use almond milk for resetters))
1/4 cup Almond milk, unsweetened
1/2 cup Oat flour
2 large Zucchini (cut into thick slices)
1 cup Marinara pasta sauce (for dipping)

Instructions


  • Prepare 3 different bowls. Place oat flour in one bowl, egg wash (egg and milk) in another bowl, and last your “bread crumb mixture (which is the pecan flour, flax seed and seasonings)
  • take your thick sliced zucchini and dip into flour, then egg wash, then bread crumb mixture until fully coated in both sides and then lay on aluminum foil and cook in your air fryer, or you can pan fry them or bake in oven.
  • they took about 15 minutes on 350 to cook. Yielded 15-20 pieces. Dip in some marinara and enjoy.
