These chocolate zucchini brownies make that sneaking vegetables into desserts truly enjoyable.

Ingredients


1/2 cup Almond butter (natural; unsweetened)
1 small Banana (s) (not completely ripe)
1 medium Egg
1/4 cup Maple syrup, pure
1/4 cup Cacao powder, raw
1 tsp Vanilla extract, pure
1/2 tsp Baking soda
1 medium Zucchini (shredded; squeeze excess liquid)
1/4 cup Dairy-free mini chocolate chips (dark)

Instructions


  1. Preheat your oven to 350F. 
  2. Line an 8x8 baking pan with parchment paper and set aside. 
  3. Add all the ingredients except for the zucchini and chocolate chips to a high-speed blender or food processor, mixing until well combined. 
  4. Transfer batter to a medium bowl and stir in the zucchini and chocolate chips. 
  5. Pour the batter into your prepared baking pan. 
  6. Bake for 35 minutes, until a toothpick inserted into the center comes out clean. 
  7. Allow to cool for 15 minutes before serving.
