|1/2 cup||Yellow onion|
|3 medium egg||Egg|
|1/2 cup||White mushrooms|
|2 slice||Rye bread|
1. Chop onion and mushrooms and grate zucchini.
2. Sauté veggies in frying pan on med-high heat for 5 mins.
3. Crack eggs and whisk together in bowl and add to pan.
4. Stir mixture until eggs are cooked (about 5-7 mins)
5. Serve with whole grain toast and enjoy
