1 cup Baby spinach (chopped)
1 cup Swiss chard (chopped)
1/4 cup Parsley, fresh (chopped)
1 clove(s) Garlic (grated)
1/4 whole lemon(s) Lemon peel (zest)
4 tbsp Extra virgin olive oil
1 pinch Salt and pepper (to taste)
1/4 cup chopped Watercress
2 tbsp Pistachio nuts (chopped)
1/4 whole lemon(s) Lemon juice
2 tbsp Parmesan cheese, shredded
2 medium Zucchini (spiralized)


Finely chop every type of green you can get your hands on (kale, Swiss chard, parsley, and spinach are all great options—no need to cook any of them) and mix with finely grated garlic, lemon zest, and lots (and lots) of olive oil.

Season with salt and pepper and toss with zucchini noodles. Serve in a bowl with watercress, chopped toasted pistachios, a squeeze of lemon, and plenty of Parmesan shaved over.
