Ingredients


1/2 tbsp Canola oil (H‑E‑B Cold Pressed Canola Oil with Garlic Flavor)
1/2 cup Cherry Tomatoes
213 gm Great northern beans, canned (drained)
152 gm Zucchini (H-E-B raw zucchini spirals)
1 1/2 tbsp Mediterranean herb seasoning (Gourmet Garden Basil Herb Blend)
1/4 cup Dairy-free mozzarella cheese shreds

Instructions


1. Put oil in a large skillet over medium-high heat. Add in cherry tomatoes and white beans. Sauté until tomato skins begin to blister.

2. Then add in zucchini spirals and basil. Cook just until spirals begin to soften. Remove from skillet and place into bowl. Top with cheese and serve.
