Overnight Vegan Raspberry Truffles

Ingredients


1 cup Frozen raspberries
1/2 cup Coconut butter
1/2 cup Dark chocolate chips, vegan
1 tsp Baking powder
1 tsp Baking soda
65 gm Vital wheat gluten
1/2 cup Almond flour/meal, Bob's Red Mill
1/2 cup Cocoa powder, unsweetened (outside dusting)
1/2 serving(s) coconut butter (1/2 cup)

2 cup Coconut flakes, unsweetened
1 tbsp Coconut oil

Instructions


  1. Puree the raspberries in a blender or a food processor.
  2. In a saucepan over medium heat, warm the coconut butter, pureed raspberries, and chocolate chips until it liquifies.
  3. Add baking powder and baking soda.
  4. Stir in the vital wheat gluten and almond flour.
  5. Transfer the batter to a mixing bowl, or leave it in the saucepan, and put it in the fridge overnight. 
  6. The next day, roll the truffles and dust them in the cocoa powder.
  7. Store in the fridge or freezer.



Instructions for "coconut butter"

Mix together in a Vitamix or food processor, keep in the fridge and use when needed
