Pumpkin (and Winter Squash) Recipes

Healthy Gut, Healthy Brain, Happy You!

Most of these recipes use roasted and/or pureed pumpkin, but some recipes use other winter squashes like kabocha, butternut and acorn squash. These squashes can be prepared and served in similar ways to pumpkin. You may be able to substitute one type of squash for another, with slight variations in flavour. Different varieties of pumpkins will also have different flavours, so feel free to experiment and find your favourites.

Some of the recipes include pumpkin seeds and/or pumpkin seed butter.  Pumpkin seeds are high in minerals include manganese, magnesium, zinc and iron.
